There is nothing quite like a little tipple of home made Cherry Brandy to warm the soul on a cold, dark winters night.
As Cherries are in abundance this summer thanks to the beautiful weather we've been having why not have a go at making your own this year, here is my very quick and easy recipe for this delightfully moorish treat.
Equipment:
Largish kilner jar, sterilised either with boiling water of put in a oven for 15mins (dont for get to take of the rubber seal if doing the section one!)
Use a ratio of:
450g of sugar
150ml brandy (inexpensive with do just fine)
2-3 drops of pure almond essence (optional)
Place washed cherries, with stones, into the kilner jar. Pour in brandy (making sure you don't spill any!) and then spoon in the sugar.
Seal and give it a good shake. Store in a dark cupboard and shake daily for at least a week. Then put out of reach until Christmas. Strain though a piece of muslin to remove the dredges that will have gathered over the storage period and fill a pretty bottle with it.
This makes a wonderful pressy if you can bear to give it away!
